Matuška are craft beers brewed without sugar, syrups or hop extracts, only with water, malt, hops and yeasts, and with a decoction mash, a process that is very demanding in time and energy, but gives our beers a fuller body.
All Matuška beers are unfiltered and unpasteurised, keeping their fresh character, as if they were tapped straight from the lagering cellar; and also plenty of yeast, with their high contents of vitamin B and other things good for your health.
We brew bottom and top fermented beers. Each type uses a different kind of yeasts.
Top fermenting is the an older process where the beer ferments at temperatures of around 20oC, and the yeast go to rest at the top of the wort. Its the way Ales, Weizens and Stouts are made.
Bottom fermenting is a technique that became most widely used from the mid 19th century. Beers ferment at temperatures of no more than 12oC, and the yeasts drop to the bottom of the fermenters. It's the way Pilsners and other lagers are made.
The world of beer is very diverse. There are more than 100 different styles today. And besides Bohemian Pilsner Lager, we brew several other of those styles.
